Clafoutis for Kathryn!

cookedThis is a great little recipe when you need something sweet but still want to be reasonably good. I’ve adapted it from a recipe from the Taste site. The hardest part of this recipe is cutting up the fruit! You can halve this recipe too!

Apple and Cinnamon Clafoutis

1/4 cup sugar (whatever you’ve got: brown, caster, normal)
1/4 cup plain flour
2 eggs
1 cup low fat/skim milk
2 small apples or 1 large apple, or a tin of pie apple
Frozen raspberries, blueberries or both!

Pre-heat oven to 180°
Lightly grease four 1/2 cup ovenproof ramekins (I use the spray oil)

Combine sugar and flour in a bowl and whisk in eggs and milk and cinnamon. Make sure mixture is smooth.

Peel, core and quarter the apples and slice thinly

Layer apples and berries in ramekins, then divide custard mix evenly between ramekins.

Bake in oven for 25-30 minutes. Let stand for 5 minutes as it will be very hot.

  4. It’s been years since I had a clafoutis-that situation should be remedied stat! Apples, cinnamon and cream have got to be one of the best combinations ever 🙂
